Enjoy These 3 Leafy Greens This Summer

Do you struggle to incorporate leafy greens into your regular diet? It’s widely known that leafy greens are healthy—but just how healthy are they? We’re going to dive into some of the healthiest leafy greens and some fun ways that you can enjoy all of them this summer.

Kale

If you could compile a list of not only the healthiest greens, but one of the healthiest foods overall, kale would be at the very top of that list! They are packed with just about every essential vitamin and nutrient you can imagine: vitamin a, vitamin k, vitamin B6 and vitamin C in particular! Not to mention, it’s loaded with calcium, magnesium, and potassium. It’s rich in antioxidants and has powerful anti-inflammatory effects. What’s not to love? Occasionally criticized for having a more bitter taste, kale can be delicious when prepared correctly! Give kale the love it truly deserves by trying our Ancient Greens Power Bowl. A fresh and delicious summer meal you will certainly enjoy!

Spinach

We’re ranking spinach a very close second when it comes to a powerfully packed leafy green! Good for improving glucose levels, iron and calcium, it’s also rich in antioxidants. There are even studies that indicate that spinach can help to improve high blood pressure, due to its high potassium content. If spinach isn’t your favourite, it can be easily disguised in sauces, smoothies, and stir fries, particularly if you aren’t too keen on salads. A must-try meal to get all of the benefits of spinach is our signature Spinach and Cheese Ravioli!

Bok Choy

Like spinach, Bok choy is another power packed leafy green that is an exciting and healthy summer meal addition! Bok choy is also a powerful antioxidant that is rich in vitamin C, vitamin E and folate. It also contains selenium, which is great for preventing inflammation. Not to mention, it’s high in fibre so it also promotes a healthy digestive system. We can go on forever about how eating more Bok choy will leave you feeling healthy this summer, but why not give it a try for yourself? Our Authentic Korean Rice and Tofu recipe is bursting with flavour and will be the perfect introduction to Bok choy if you are anxious to try it!

We get it: sometimes salads just can’t replace that warm aroma of a freshly cooked meal, but you can still enjoy your leafy greens and feel the incredible health benefits! We just so happen to feature all three of these powerful leafy greens on our menu so give them all a try this summer!
